We recently had Varitile shingle roof installed over our existing shingle roof. We did not have a ridge cap prior to this, and it was to be installed. I do not really understand how that works, I cannot see daylight from inside my attic??? And the shingles on the ridge cap are sloppy and have foam showing under them. The contractor said that will not hurt anything???!

Like Todd, it is assumed that you mean Ridge Vent instead of Ridge Cap.
If that is so, the foam that you see may very well be the vent material that was used for your venting. It would be recommended that you ask the installer what vent detail that they used and then search that design out to determine if is proper for your roof.
Depending upon the vent detail, you may see light, but you should never see "daylight", meaning unobstructed light.
