leaks in ceiling after installing new pitched metal roof

hi-I have a 12 by 60 older mobile home-original roof was flat with a slight pitch over the kitchen-it is tin/metal-had some leaks so had someone put a compound that looked like tar over the seams and over damaged areas-worked some but still had some leaks-then had rolled roofing put on-this worked until someone shoveled off the roof and took a small area of the rolled roofing off which in turn had leaks again-decided to stop patching and have new roof installed-a frame was built around entire roof so it would be even across-5-12 pitch-then the trusses were put on and metal panels attached-ridge cap and soft-it installed with the foam strips supplied for installation-on the inside of trailer the ceiling the old ceiling was removed along with old insulation -replaced the supports across that had been water damaged-you could see the inside of the original tin/metal exposed-then new insulation(pink stuff) installed and tongue and groove cedar installed-looked so good until drip drip drip started-in multiple places in ceiling-cut out area on end of trailer to crawl into to space between old roof and new to see if new metal roof was leaking-not the case-dry everywhere and after alot of rain-seems to leak more when it gets warmer outside with lots of sun-took some of the tongue and groove cedar off inside and the tin/metal had a layer of frost-like on it-as the heat from inside got to it it melted and dripped-someone suggested taking all of the cedar off-replace any water damaged insulation-put plastic on then put cedar back on to create a vapor barrier-seems to me that water may now just drip onto plastic and be contained but still have insulation getting wet-by the way there are vents at the ends of the trailer going into pitched space-need some advice before we tear out all the cedar and start over-thanks in advance
