How widely used is insulation facing for metal roofing? This would be a polyolefin laminate that bonds to the insulation to create a moisture barrier. I know one example is Novashield fom the Intertape Polymer Group. Do you know of many other manufacturers?

While this almost sounds like an advertisement, these types of products are not desined or priced for residential metal roofing (steep slope). There are however a number of various manufacturers of these types of products typically used for low slope commercial applications. All one needs to do is choose the perm rating required for the application and the appearance and durability desired by the owner.

There really is too little information here to comment properly as you are getting into complete roof assemblies. Best choose a profile and contact that manufacturer and get their recommendations.
