Can a metal roof be put on a house without destroying or cutting off the gingerbread trim?

It depends on the exact situation but in all likelihood, yes. You need to specify this with the contractor though before you sign anything.

+1 Most gingerbread trim that I see hangs down beyond where the normal rake trim would interfere with the fitment of it.
