Condensation in pole barn 'cabin'

We have a pole barn which has been converted into a multipurpose fishing cabin for family gatherings. I want to be able to close the vents and heat during the winter. The metal roof has the thin plastic insulation that's showning wear and 'tear'. I get drips from these areas. To make it more livable should I put ply and tar paper down and new insulation in the open ceiling? How do I convert a tin pole barn ceiling into one with no condensation?
