Taking roof off of cabin this weekend to try a remedy condensation issues. Current roof layout from bottom to top is: ceiling, layer of roofing felt, rafters w/insulation, 1x4's, then metal. Plan is to remove 1x4s and put 7/16 OSB decking on top of rafters with layer of 50 wgt felt between metal and OSB. Will this fix them problem

It will help. However, if there is a way to add insulation, ventilation, or a vapor barrier behind the ceiling, that will help as well. Todd Miller

What kind of insulation would you recommend and how would you ventilate?

Ventilation requires intake and exhaust vents. Intake vents usually at the eaves and exhaust at the ridge. Great source of info is www.airvent.com Insulation I was thinking blown in or batt. You could also look into polyicyene which would reduce the need for ventilation. Todd Miller
