aluminum,copper,lead,steel,tin,etc... due to the fact that different metals transfer heat differently what type and thickness of metals would produce the greatest and least amount of sweat? some poly/plastic materials can chemicly react with metals could a porous/spongy underlayment create more potential for chemical reaction?

I do not think that you will notice an appreciable difference betwene different methods in regards to this. Moisture condensing on the back of pure rolled zinc panels will damage the zinc over time. Todd Miller
