I am designing a sunroom that will have an essentially flat roof. The roof pitch will be 1"/18" which is the maximum the site allows. Will a standing seam roof work for such a low pitch application? I am also considering the various "rubber" roofing materials which are designed for truly flat roofs like this but wanted to investigate other options.

It would have to be a mechanically seamed standing seam. Todd Miller

What about some sort of snap lock with the double sided tape?

You should check with the manufactuer of the panel you plan to use. Most vertical leg snap lock panels require a minimum slope of 3:12. Our company, and others, manufacture a trapezoidal snap lock panel that can be installed on a 1/4:12 pitch but it is not a residential panel.
