Metal Roofing on two different slopes

We just got the old tar-gravel roofing material removed on 2:12 pitch roof. The top of the cardecking is the bottom of the roof. There is no insulation or spce below our roof. We've talked to a few roofing companies and they have a few different opinions on how to install standing seam metal roof. What is the best way to install standing seam metal roof with 2" poly ISO insulation underneath and what kind of underlayment. Do we have to use the ISO insulation? The house is located near saltwater and at times with high wind. Thank you for your help in advance.
