we are installing a metal roof and not sure what to do about the logs that need flashing around them. Do you have any suggestions for what to put around them?

This is a difficult situation. Have you talked to your metal roofing manufacturer? You will probably have to custom flash them. Put good underlayment around them and even seal it up the log post a ways. Use a top quality butyl sealant.
