I have the opportunity to replace the old metal roof on a farmhouse. The roof will be stripped to the rafters. The attic will be finished on the interior with cathedral ceiling. I would like to use a spray foam insulation between the rafters. What type of metal roofing would be best? Also what type of underlayment would be best or is it possible to spray the insulation directly to the underside of the metal roof?

As far as underlayment or not, that must be answered by the metal roofing manufacturer.
As far as insulation, I would suggest closed cell polyurethane.
