I'm planning to install a standing seam copper roof over a shed addition, 17'x14',with a 2 1/2:12 pitch, and would like to find details for a roof/wall vent that will ventilate properly, and keep out wind driven rain,and be compatable with traditional standing seam fabrication techniques. I'm concerned that that may be difficult with a slope as low as this.The pans will be going over a ply deck with 2x10 rafters below, filled with R30c batts and styrofoam air space baffles.
I'm also wondering if it wouldn't be better to not vent the roof at all, and just blow in dense pack cellulose, or icynene, with a vapor barrier. This is a kitchen addition with range hood ventillation, and connected to an old stone house (removed wall) that isn't real tight to begin with.The jist of this being that maybe most of the moisture generated in the kitchen (and unfortunately, the heat too) would migrate to the draftier portion of the house, instead of condensing in the roof.

It is pretty difficult to predict the exact dynamics of what will happen in your home in regards to this. However, I will say that it is hard to install a 100% vapor barrier. Moisture usually has a way of working its way around them. There are various attic vents which can work with standing seam including even standard square static vents. One thing you'd want to try to do is avoid contact between the copper and the aluminum or steel of a vent. You also might try contacting some manufacturers of copper standing seam to see if they offer any copper ventilation products. One thing you might do is add a decorative arched dormer or something in the roof and vent it. Also, you could also consider a triangular vent in each of the shed gables -- that might create adequate cross ventilation though it would have to be below the rafters and I am not sure your construction allows for that. There is also a product out called Aura-Vent (can be found with an internet search) which would vent the living space direct to the outside.
