We are needing to know how to go about sealing around our rock chimney on a remodel job. The chimney is located low and on the edge of the house. Any suggestions?

You don't specify what type of roof you currently have that you are trying to seal in relation to the fireplace and what flashing is currently there. You said it is low on the roof. If it is a wide chimney you could possibly need a cricket built before you flash it. Also, if the fireplace is not real wide, but you have a steep slope, you could possibly need a cricket and to obtain the best flashing detail, you will need to cut a reglet in the stone to set a counter flashing.

Wade's advice is great.
As always, to, I would refer you back to the roofing manufacturer.
Ideally you will cut into the stone in order to insert a flashing into it. If due to the contour and design this is simply impossible, use lots of underlayment sealed to the chimney, work in a 1 x 6 collar around its base, more underlayment around that, flash up the wood collar, returning to the chimney and using a compass to allow you to trace the exact chimney contour onto the flashing. Trim out the flashing to fit tight against the stone, and then seal it very very well with a quality butyl sealant.
