Ice and Water Sheild

I will be installing a Decra metal shake roof on my timber frame home. I am considering installing Ice and Water shield on the entire roof to help raise the humidity in the house in the winter (avg now is about 25%). The house has vaulted ceilings throughout and the roof is constructed of stress skin panels (12 in thick). The interior of the house is full of very dry wood (the beams). My question is - is it possible that the humidity might go up too much and produce interior damage (mold, etc).
