I am thinking of re-roofing my house with Stone Coated Steel Tile such as DECRA or Metro. How do these systems accommodate thermal expansion and contraction in severe temperature fluctuations (-30degC to +30degC)?

First of all, despite the temperature change, the small panel size of these products means not a lot of movement is going on. Allowance exists in the interlocks and overlaps for the thermal movement.
These products however do usually have "through" fasteners so the fasteners dod sustain some pressure.
Some metal roofs, both standing seam and shingles, install with nail clips which create a roof that sort of "floats" with thermal movement.
I would suggest also bringing your questions direct to Metro and Decra for their input.
