Do you cut and v the rake trim over the peak of the roof like normal drip edge on a shingled roof

It really depends upon the design of the trim. I would try to cut what you need to and bend the rest over a bit if you can. Again, though, it really depends upon how the part is designed and also on what you're using for ridge treatment. In any event, always keep uphill pieces lapped on top of downhill pieces.
