How much waste should be factored in on a metal roof?? (hip or gable) Also, are the panels sold in a standard size or cut to fit??

This depends on the metal roofing system that you select and the configuration of the roof. The more hips, valleys, etc the higher the waste. Modular systems have similar waste factors as other roofing products. When you get into vertical rib you need to have an estimate completed as you will be ordering specific sheet legths.
