We are installing a metal screw down roof and have dormers. How do I finish off the valley flashing where the ridge of the dormer meets the valley flashing(two valley flashings intersecting at an angle)

Normally both valleys will lap over the ridge, one over the other, and the ridge cap over that. The manufacturer of your roofing should have installation guides showing this. A couple of manufacturers with guides online are Fabral and metal Sales. Todd Miller
