what kind of roof would be recommended for an island house on the water? The existing metal roof is 20 years old and needs to be replaced. We are right next to the gulf of Mexico and experience heavy winds.

My first recommendation is the base metal is aluminum. Galvalume would perform reasonably well. Both should be painted with a high performance paint coating. Regarding the high winds that is more of a function of profile that you select for aesthetics, flashing details that are recommended by the manufacturer, and the recommended fastening pattern.
