I've been looking into building a house and geodesic domes seem really interesting to me. Has anyone ever put a metal roof on one? Is it possible and does it make sense?

Roofing a dome is difficult and pronblem-prone frankly no matter what sort of product is used. For that reason, metal makes sense because it follows a "do it once, do it right" philosophy.
Now, that said, you will need a product which its manufacturer agrees can be installed on a dome and you will need an experienced installer.
I would say that generally some of the shingle, shake and slate profiles may be most adaptable to domes.
Once you get some drawings for your home, send them out to manufacturers of roofing products you like and ask for their input and ideas.
