I had a metal roof manufacter tell me to be sure and get a style of panel that can be removed at any point as opposed to panels that "build on each other" going right to left or left to right. An intaller that I talked with said there was no such thing with standing seams. Who is correct?

There are some differences from product to product and sometimes you can "force the locks" for repairs but generally all interlocking metal roofing products will "build on" each other. Todd Miller
