I would like to know how sturdy they are as far as with standing a hurricane and leaking, what type of underlay do you use and what preparations do I need to do before hand, since we have now had hurricane damage to our roof.

You can look for panels which have passed 90 psf uplift testing. That is the test required by many coastal areas now. Many metal roofs have passed this test.
Underlayment should be as specified by the roofing manufacturer but it will often be 30 pound felt or one of the new synthetic underlayments.
