I am looking at replacing an old arched roof where the concrete has failed but the metal arches are still in good shape. What systems are available that could go over the existing arches or if I have to, what seytems/manufactures could make a roof to the existing structure.

There are a few metal roofing manufacturers making arched vertical seam panels. Check with ATAS International, Englert, Petersen Aluminum, McElroy, MBCI and Firestone Building Products and see if one of them can't help you.
Another option here "might" be some of the shingle profile metal roofs which can sometimes work very easily on arched roofs.
