First of all, manufacturers typically warrant various aspects of their product but they do not warrant the proper use of that product.
Of course, though, they will say what the minimum required slopes are for their products.
Generally, though, most "snap lock" standing seams can be used down to 3:12 pitch, or maybe as low as 2:12 especially if there is sealant in the seams.
However, a mechanically seamed standing seam (which involves running a crimper down the seam after the panels are installed) can often be used on pitchs of 1:12 or even less.
