What is the recommended maximum panel length (eave to ridge) when using a through-fastened metal roof panel. I have heard answers that vary from 40 feet to 120 feet.

Generally, through-fastened products are in short sheets of 12', sometimes up to 20'. What you're describing sounds rather unusual to me. I would also say that this sort of recommendation may vary by manufacturer.
