Where can I get info on the pros and cons of steel vs. aluminum?

I would talk to companies which manufacture both aluminum and steel -- they will be the best at having non-biased opinions and information on this subject.

In your opinion, which metal type ( aluminum or galvanized steel) would be better suited to the panhandle of Florida?

There are a number of factors. If you were on the beach with prevailing winds, then Aluminum is best. There are two types of metalic coated steel that are supported by the industry; Galvanized and Galvalume. Galvalume has excellant salt water resistance with the aluminum and zinc in the coating and performs well when not in direct salt spray. Galvanized is ok farther back off the coast and painted. Make sure you look at the code requirements. Steel typically has better wind uplift properties, however that is system related. Check that the product has a product approval.
