Could there be moisture buildup under the metal shakes in a battenless install on a residential home. If so what would the consequences be? I thought that one of the purposes of the batten system was to allow airflow under the shakes?

This is not a problem. You can get some occasional condensation on the back side of the metal. However, a good underlayment between the metal and the roof decking will prevent damage or problems.
However, this does not diminish the need to have good attic ventilation to prevent an unhealthy buil-up of moisture from the inside the house. This is critical no matter what type of roofing is installed -- metal ro something else.
