Each metal roofing product will carry its own installation products, including information on whether and how to install over old shingles.
I always suggest an underlayment on top of the old shingles to prevent abrasion.
Some metal roofs would then be installed directly over that and others would require battens.
Always check for existing problems such as excessive weightload, leaks, or rotten decking before proceeding with an installation of this nature.

I have two layers of existing shingles on my roof. Is weight going to be a consideration for me? The house is a ranch style built in '63. One contractor has told me I should remove the shingles first, but he is the first of three so far to tell me this. Any advice?

Realistically, most homes can handle the weight of two asphalt shingle roofs plus a low weight metal roof. However, building codes in most areas call for a maximum of two layers of roofing. In some cases, building inspectors have waived this requirement once they considered the low weight of a metal roof.
Signs of an existing weight problem (which you should always look for) include sagging decking and buckling or cracked trusses.
