I have a house that primarily has a pitch greater than 3:12, but there is an addition that has a pitch of just over 2:12. I know there are metal roofs available for that low of a pitch and that is what I am leaning towards when I replace my roof in the next few months. I would like to know what some of my options are (in terms of what manufacturers make a metal roof for a lower pitch). In particular, are there any "interlocking" type metal roofs for that low of a roof that don't require being sealed by machine (because I assume such a system would be cheaper?)

I believe that the vast majority, if not all, of the manufacturers listed on this site as producers of Vertical Panels will have an option for 2:12 pitch. Many of those options will not require field-seaming of the panels.
