We are putting an addition on our 2nd home in Vermont. It has a galvanized
metal roof that is about 40-50 years old. The roof seems to be in good shape
although there are stripes of rust at the seams. We want to paint the
existing roof to match the metal roof we put on the addition, but our
painting contractor says that you can't paint an old metal roof because the
paint won't stick. Is this true?

This can be done, as long as whatever paint is there now has good adhesion. I would suggest power washing the roof to get it as clean as possible. I would then use a quality primer followed by a quality top coat. A quality paint store will be able to help you select appropriate paints.
