The continuous ridge is probably preferable here if you can tie everything together seamlessly and make it look right.

I am installing a corrugated metal roof and have a continuous ridge beam at the apex of a gabled roof but the roof pitch changes part way along, from 35 degrees to 10 degrees. This means the point of change will involve a cheek wall (with apron and barge flashings) meeting the apex of the roof. Any ideas on how to install and flash around the ridge cap at this point? Wondering whether to get a continuous ridge cap and cut the sides so the roll top is continuous when installed, or whether to treat it like a valley junction and install (and somehow lap) two separate pieces. Any help hugely appreciated!
