I have put down PSU30 on my entire roof, I have read in some places that there are certain areas of your roof you want to put down 2 layers of underlayment, such as valleys, or the ridge.
Is that required? Best practice?

Not really required with a properly done metal roof whereas it might have some benefit with an asphalt based roof.
Ice/water in the valleys is always a good idea.
