I have read you need uncoated stainless steel or factory-enameled galvanized steel with a baked-enamel certified lead-free finish. It cannot be impregnated with lead, copper or zink. Do you have any products that meet these specifications and can be used to collect potable water?

All rainwater that is harvested must be treated to be considered potable.
There are potential contaminants in rain as it falls (acid rain) and in debris that accumulates on the collection surface.
Stainless steel and bare aluminum are the roofing metals I would recommend to minimize the leaching out from the roof.
