Color is a personal selection. Either one sounds good to me, you may want to consult with an interior designer.

How do you determine what colors to use? I have a bluish gray shop with black shutters and door. Is it better to use black or red?

I like Dick's suggestion. One thing I always tell people, too, is that, thanks to the durability of metal roofing and the quality coatings available today, it's important to keep in mind that, whatever color you choose, you will be "married" to it for quite awhile. Some contractors and manufacturers may be able to bring out sample panels to lay up on your roof which may help you visualize things as well.

I found an online color-picker here: http://www.metalroofingsource.com/color_comparisons.htm
It allows you to play with different colors for siding, trim, and roof. Not perfect, but it's a start.

+1 to Todd's comments.
Make sure you like the color.
Most manufacturers have actual color swatches of the material in question and can send them to you or you can pick them up from a local supplier.
Always a good idea to see them in day lighting conditions.
