Read a forum here that some metal roofs are installed with no vents (gas exhaust vents) how is this possible? Or better, can these vents for gases be exhausted differently for metal roof installation. If so, how safe is it?

I am not sure what you read but, no, such things must be exhausted to the outside per building code.

Is there such a thing as applying the metal roof on top of the existing single roof using wooden slats between the old and new. Then cutting down vents to the gap then allowing for gases to escape between gap that was created between old and new roof

Some metal roofs can be installed over battens but using the gap for any sort of exhaust violates codes and is dangerous.

+1 again. Do not count on convection to exhaust sewer gasses.
