I was wondering if there is a problem with installing a standing seam roof with a heavy snow load? I was told that because of the number of valleys in my roof that a standing seam roof would be a bad choice. He said that the snow could build up and slide down one side of the valley and rip the roof off the other side of the valley when if hit. Could this happen and is it likely?

Potentially.
Snow guards should keep those big slides of snow from unchecked movement.

There is no reason why standing should not be considered simply because snow load may be a factor.
Snow does accumulate (build up) on any roof more so than on another, nor will it tend to accumulate on side a valley more so than on the other.
The trick is to control the slide of snow using a good quality snow retention system such as S-5! ColorGard.
