some poly/plastic materials can chemicly react with metals
could a porous/spongy underlayment create more potential for chemical reaction?

I do not think that you will notice an appreciable difference betwene different methods in regards to this.
Moisture condensing on the back of pure rolled zinc panels will damage the zinc over time.
