There are various styles of standing seam and even they have differences. The key is installing a product that is designed for the job at hand, and doing so correctly.

So, if my main concern were water-proofing the house, is standing seam the best option, as far as metal roofs?
It seems to me from common sense, that it would be (i.e., fewer points of failure/of entry--vs. for example, metal shingles).

Proper installation and use is critical to all of these products.
Mechanically seamed metal roofs are approved for the lowest pitches which is an indicator of their ability to hold water.
