I just installed a gorgeous "cool" standing seam roof colored "Weathered Copper". The problem is it is highly reflective and the sun light bounces into a neighboring residence second floor windows, like a blinding mirror or search light. Is there some coating or low reflective paint that I could apply to reduce the glare?

Any coatings you apply now will void the warranty on the existing coating. That is important to keep in mind.
The glare will dull over time. Imagine letting your car sit outside without washing it for a few months -- it will develop enough dirt and dust and grime that the shine will diminish.
