I have a large section of roof that is a 2/12 pitch with rolled roofing and a large 3 flue chimney that has a cricket in front of it and step flashing down the sides. Would a standing seam roof work in this application and what would be the correct way to fit this roofing around the chimney? Any photos you might have of a similar installation would be appreciated.

Some types of standing seam will work for this low slope, but other types won't. You will want to check out the manufacturers link above, and contact some of these companies.
On the chimney, the flashing will depend on the manufacturer and type of standing seam used.
