Our homeowner's association has refused my request to install a metal roof. I'm interested in a metal roof for both longevity and energy savings. Is anyone familiar with any legal precedents involving the overturning of homeowner association restrictions against metal roofing?

I am not sure of legal precedents but, as an association, we and our individual members have many times gotten involved presenting the story of metal roofing to HOAs and ARBs, often with great success. The key is usually in helping them to see how "today's metal roofing" is not what they may think it is.
Would it be possible for us to contact your HOA and try to get some time with them?
