Current building codes call for a 1" airspace even in a cathedral ceiling situation.
In certain climates, the situation you describe could result in moisture and condensation problems regardless of what type of roof is installed.
A vapor barrier beneath the plywood would be helpful.
You might also consider a metal roof which is in a profiled shape so that you do not have as much contact between the back of the metal and the underlayment. That way, any moisture which gathers will have some opportunity to evaporate rather than be trapped.
Regardless, once you choose a metal roof, consult with the manufacturer about your situation.
