I am building a home and want a flat panel
standing seam roof, as the architect who drew my plans specified. The roofing contractor I consulted with today says I do
NOT want that type roofing, as it will oil pan and not look good. What do you suggest I should use? My builder is ready to order roofing, but is not expert on metal roofs. I want a roof that looks like the ones in Texas hill country or on the gulf coast.

Some oilcanning can occur on some vertical seam panels. A good sub-structure, quality roof panel, and proper installation will minimize the chance of oil canning. Also, more heavily corrugated products or the shingle, shake and tile products will not do this.
As you look around, I am sure that you see many metal roofs you like. There is no reason you cannot have the same thing you see.
