You have a variety of styles to choose from. The gauge will be dependent upon the product. A standing seam roof should probably be a minimum of 24 GA to satisfy the local wind uplift requirements.

Yes, you need to be concerned about meeting uplift requirements.
Gauge is not the only factor though in successful metal roof performance. Finish, design, and installation are major factors as well.
