We just built a brand new log house with a complicated roof system (may valleys, gables, and dormers).
The contracter who put the metal roof on put no tar paper underneath, or plywood. Are we going to have a condensation problem or will it be okay after it is insulated.

It sounds like the roof is installed over lathe or battens instead of decking. When that is done, it is normal to not use underlayment.
First of all, you must verify with the manufacturer of the roofing that this sort of application is acceptable for residential jobs and in keeping with their product and test requirements.
If that is all okay, you will wnat to have a good vapor barrier behind your ceilings, good insulation on the floor of the attic, and good ventilation consisting of eave intake and preferably ridge vent exhaust above that.
