I have a 3V Galvalume metal roof on my house. This roof has been installed directly over 30lb Felt. I was told that without the slip paper between the metal and felt the felt would eat a hole in the roof. Is this true?

This is not correct. The purpose of slip sheet is to allow the metal roofing to expand and contract. The problem with 30-pound felt is that it may stick to the back of metal roofing and then, with expansion of the roofing, the felt may tear.
In your case, though, I think you have a metal roof which has through fasteners, meaning that stress is put on them during expansion and contraction and you may not have as much to worry about without a slip sheet as you would with some standing seams.
Check with the manufacturer of your roofing and see what they say.
