I have a low-pitch roof (3/4" per foot) with only 8-inch attic space. currently there is no insulation. What would be the best option with metal roofing without building more attic space. I am considering filling the 8-inch attic space with insulation or some sort of insulation between the plywood and the metal roofing. Is metal roofing even possible with this pitch?

Yes metal is a good option here. Typically you will need a Standing Seam panel. Make sure you chose one designed for this slope. The building code calls for a 1" minimum air space under the roofing. I would install a 3/4" strip vertically over you framing members, the lay down a high quality underlayment (moisture barrier) and the strap with a 1x4 horizontally as per manufacturers specs. You can then install a profiled vented mesh closure at the eaves and ridge to allow the space to breathe and you may want to keep to the lighter colours.

What styles of metal roofing will best suit a flat roof with a 1:12 ratio. Idaho location, high desert in Twin Falls area. Thank you

This is a little too broad a question as there are many factors to consider. Is there an upper roof feeding the lower are? Is the rafter length very long? What type of problems have you had with your existing roof. Having said that, You should be using a vertical seam roof. The more water you need to move off and the longer the sheets then you should consider a standing seam roof and if a lot of water then the higher the seam. The new building codes call for a minimum of 1" air space on residential roofs if this is an attic less assembly. You can accomplish this by vertically strapping the roof over the rafters, installing a good quality moisture barrier and then strapping horizontally to meet the manufacturers recommendations. Don't forget to ventilate the air space.
