I was watching this old house, where a metal roof was being installed. At the end they quickly showed how to cut the end of the ridge vent in a polynesian style. It appeared that they extend the vent and cut it at about a 30 to 45 degree angle to produce an overhang. Do you have any pictures of this or instructions on how this is done? Thanks

Sorry no pictures but we have seen one contractor do this with our trim. Basically you bend the end of the trim down on a 30-45 degree each way using a pair of duck bills and then fold it back under so that you will see painted underneath. You will need to try it once but it will take approximately 1.5" extra material.
