I am removing existing shakes and would like to know if there is any metal roofing that could be installed on existing spaced sheathing?

There are various shake, tile, and vertical seam products which can be installed over lathe ... though some extra boards may need to be added depending upon spacing. Also, in all cases, make sure that the manufacturer of the roofing is okay with what you're doing.
You will wnat to make sure that you have good attic ventilation.
