We have 2 metal roofing companies giving us vastly different quotes. One of the differences is that one co. does not use ridge vents in their roofs, and they fabricate the sheets of metal they buy at the site. The other company feels ridge vents are mandatory.....

I am a strong believer in venting. Proper venting requires two things: intake and exhaust. Intake is often in the form of soffit vents in the overhangs. A good way to exhaust is with a ridge vent integral to the roof covering. Venting helps to reduce a/c costs and also make for a healthier home by helping to avoid unhealthy build-up of mold or condensation.
There is a method of creating a "hot attic" that would not be vented buit it requires special insulation and other things in the attic.
Also, some cathedral ceiling areas are tough to vent. I would suggest figuring out a way to vent them though.
